Tuna Steaks with Cucumber Sauce
Authored By:  Polly Pitchford, Full Spectrum Health™
The assertive seasonings are mellowed by the Cucumber Sauce. Wonderful!
Diet Type: Low Carbohydrate
Ingredients:
  • 2 tablespoons ground Cumin
  • 1/2 teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup plain, non-fat yogurt
  • 1 tablespoon crushed red pepper
  • 4 large cloves garlic, minced
  • 2 4 oz. tuna steaks
  • 1 cup minced cucumber
  • 1/4 cup minced scallion
  • Serves: 2
    Cooking Time: Under 30 minutes
    Instructions:
Combine Cumin, salt, red pepper, garlic, and olive oil in a small bowl and rub over both sides of tuna steaks. Grill, broil, or pan-fry tuna, turning once, until there’s just a fraction of the red left in the center. Meanwhile make sauce by combining yogurt with grated cucumber and green onions. Remove tuna to serving plates and top with Cucumber Sauce.
